Squid's Lime Chicken

Ingredients:

  • 1/2 cup fresh lime juice

  • 1/4 cup soy sauce

  • 1/2 tsp. ginger

  • 1/2 tsp. rosemary

  • 2 whole chickens cut in pieces

  • Melted butter (margarine's OK)

Preparation:
Combine lime juice, soy sauce, ginger & rosemary to make a marinade.

Marinate chicken overnight.

Grill on barbecue for about 45 minutes, basting with marinade. Baste with melted butter for about another 15 minutes.

Serve with wedges of fresh lime to squeeze over the chicken.

Squid's Mexican Meatloaf

Ingredients:

  • 1-1/2 lbs. ground beef Alternate: 1 lb. ground beef, 1/2 lb. ground pork

  • 1 can (10 oz.) diced tomatoes & green chiles

  • 1-1/2 cups soft bread crumbs

  • 1 egg

  • 3 Tblsp. instant minced onion

  • 1-1/4 tsp. salt

  • 3/4 cup shredded Cheddar cheese

Instructions:
Mix together ground meat, tomatoes & chiles, bread crumbs, egg, onion and salt. Spray a 5.25"X9"X2.75" bread pan with Pam. Shape combination into loaf in pan, using wet hands.

Bake in a pre-heated 375° oven for about one (1) hour. Remove from oven and sprinkle cheese on top. Return to oven until cheese melts. Let stand about 5-10 minutes. Remove from pan, slice & serve.
